Description: Crocus plant is basically a scrub. The leaves are arranged at the base in a bunch and the flowers are arranged either in 2 or flowers in a bunch. Flowers are violet in colour. On each flower there are three yellow coloured stemens. The stock of the female part called gynaecium contains three fibers of kesar. The plant blooms in autumn.
Chemical composition: The major carotenoid derivatives crocetin, picrocrocin, and safranal are found in saffron. The characteristic taste of the spice is attributed to the glycoside picrocrocin, while safranal is considered to be the main odiferous constituent achieved through hydrolysis of picrocrocin
Properties: Kesar is used externally for improving the fairness. It helps in depigmentation and improves fairness of skin by controlling the production of melanin.
